These easy lazy vegan pancakes are perfect for brunch, and quick to whip up when you’ve gotten out of bed a little bit too late. This recipe is almost impossible to mess up, and I know this from personal experience having made it half asleep a bunch of times.

This recipe makes 4 big pancakes.

  • Sift the flour into a mixing bowl then add all the other dry ingredients and mix together. Mix all the wet ingredients together in another bowl. At the wet ingredients to the dry ingredients and whisk till uniformed consistency. It doesn't have to be super fine, some lumps are okay and will disappear when cooked. Let batter sit for 5 minutes, while you make yourself a nice cup of tea.
  • At this point you can add things into your batter such chopped bananas or berries, if you so please.
  • Spray a tiny bit of oil on a non-stick pan over medium-low heat, like literally 5 drops of oil will do as there is oil in the batter.
  • When the pancake starts to have little holes coming through on the top side, you can flip it. Cook for another 30-60 seconds and remove from the pan.
  • Serve topped with whatever you like!

Notes

If you don't have baking powder, replace 1 tbsp baking powder with ¾ tsp baking soda and 1½ tsp apple cider vinegar. The baking soda goes in with the dry ingredients, and the vinegar with the wet.
