Ever since OmniFoods premiered their OmniMeat Luncheon, I’ve been having crazy cravings for luncheon meat. While people in Manila, Hong Kong, and Singapore are chowing down on this new vegan product, sad ol’ me stuck on the island decided to make my own vegan okara version!

When I was young, we didn’t have Spam in the house. We had the China brand, Ma Ling. Both of them were pretty much made of the same thing: Gelatinous meat grossness, salt, and a bunch of preservatives. Despite health warnings about the dubiousness of luncheon meat, they are still addictively delicious.

Luncheon meat was a pantry staple when I was a student on a budget because you get so much taste from a small serving. This vegan version is much more healthy and contains zero mystery meat. Bonus!

This vegan okara Spam/Ma Ling is perfect for a quick Spam Fried Rice.

  • Mix all the dry ingredients together in a large mixing bowl. Add the wet ingredients. Mix until uniform in colour.
  • Add the tofu and mix well.
  • Line a small loaf tin with baking paper and put the okara mixture in, pushing down with the back of a spoon.
  • Gently steam the tin for about 15-20 minutes until the top of the block is firm. Leave to cool.
  • After cooled, you can remove the block of okara meat from the tin and refrigerate or freeze,
  • Lightly pan-fry to heat.
