Vegan Spam Fried Rice (午餐肉炒饭)

Vegan Spam fried rice is a quick and easy mid-week dish. In this dish, I am using my homemade vegan okara luncheon meat. You can, of course, use the amazing OmniMeat Luncheon.

Now we’ve made a couple of different vegan eggs for fried rice so far. This time, I wanted bigger lumps of scrambled eggs, so I made it out of chickpea flour. Colourful vegetables with chickpea ‘eggs’ and vegan luncheon meat, yum!

In this recipe, I used green beans, carrots, and cherry tomatoes. Feel free to use whatever you like to create your own vegan Spam fried rice. The cook time will depend on the type of vegetables that you use. Since the vegan Spam is pretty salty, I only used a small amount of soy sauce. I also chose to use salt instead of more soy sauce, as I think this fried rice looks nicer when it is a lighter colour.

  • Mix the vegan egg ingredients in a bowl.
  • Heat 1 tbsp of oil over medium heat in a non-stick pan and fry the vegan egg mixture. Constantly mix and scrape the mixture off the bottom and sides. It is pretty sticky!
  • When the vegan eggs are fully cooked they will not stick to the pan anymore. Set aside for later.
  • Heat 1 tbsp of oil over medium heat in a non-stick pan and fry the vegan Maling.
  • Finely dice the beans and carrots. Chop up the rest of the ingredients.
  • Heat 2 tbsp of oil over medium heat in a non-stick pan and add the beans and carrots. Sprinkle them with some salt and put the lid on so they cook in their own moisture for about 3 minutes.
  • Make a hole in the centre and add the onions. Add oil if required over the onions. Fry for about 2 minutes.
  • Make a hole in the centre of the onions and add the garlic. Add the tomatoes to the edge of the pan.
  • Put your rice on top, breaking apart any clumps of rice with your fingers. Add 1 tbsp of soy sauce over the rice.
  • Mix everything well and toss until the rice is piping hot.
  • Add the vegan egg and fried Maling, 1 tsp of white pepper, 0.5 tsp of salt and 0.5 tsp of sesame oil.
  • Mix well and salt and pepper to taste.
