Sambal hijau is a type of chilli paste made from green chillies instead of the usual red. It has a fresh flavour from the kaffir lime leaves and is slightly tart from the green tomatoes. It is nice to use for frying with vegetables or as a condiment atop a block of crispy fried tofu.

Chop everything up kind of anyhow. It doesn't really matter because it's going to be mushed later anyway.

Pound all the ingredients with a mortar and pestle, or use a blender to blend everything together. The traditional mortar and pestle is preferred as the bruising of the spices allows the oils and aromatics to be released. I don't have a mortar and pestle and I am super lazy, so I use a blender.

Heat up 2 tbsp of oil in a non-stick pan on low heat and fry the blended paste. Add salt and sugar to taste.

After about ten minutes, the excess liquid should be cooked off, leaving a sexy green sambal paste.

Use your sambal hijau to fry some food!
Notes
If you like some contrast in your sambal, you can add some red chillies to the mixture.
