Enoki in Tofu Skin (金针菇豆皮卷)

Enoki mushrooms are one of my favourite edible funghi. This dish looks so lovely and fancy, doesn’t it? But really, it is an extremely simple recipe that doesn’t need much introduction. You basically wrap the enoki mushrooms up in tofu skin, tie them up with some chives, then cook them in a savoury sauce for a few minutes. Done!

The sauce doesn’t need to be overpowering to highlight the sweetness of the enoki mushrooms. The texture contrast of the mushroom and tofu skin is really nice too. An absolutely smashing little dish to bang up in 15 minutes.

  • If your tofu skin is dried, soak it beforehand to rehydrate.
  • Wrap a bunch of enoki in each tofu skin and tie the bundle up with the chives.
  • Mix the sauce ingredients together
  • Heat a small amount of oil in a non-stick pan over medium heat and place your enoki bundles in the pan to sear for about a minute.
  • Pour the sauce over the bundles and cover the pan with a lid. Leave for 3-5 minutes.
  • The sauce will be slightly thickened and the mushrooms and tofu skin will be softened.
  • Serve hot!
