Cucumber Sprite Pickle (网红雪碧泡黄瓜)

I guess everybody knows what TikTok is, right? Well, before TikTok, was the original Chinese app called 抖音 DouYin. (Yes, TikTok is Chinese!) This cucumber Sprite pickle has been burning up the views on DouYin. So, after seeing it on my WeChat feed for days, I decided to try it. And OMG it is so good.

I know, you are probably asking, ‘why use Sprite?’ To be honest, I can’t say that it would taste incredibly different from the standard sugar-vinegar pickle. However, the taste does seem to take on much better, perhaps because of the fizzy bubblech. There is also a subtle something that I can’t put my finger on. Rather similar to Vegan Cola Chicken | 可乐素鸡 where there is just that little extra oomph from the chemicals in the soda.

This cucumber Sprite pickle takes 10 minutes tops to make. The hardest part is probably slicing the cucumber. I use a fruit peeler and peeled the cucumbers horizontally while they lay flat. You want Chinese or Japanese cucumbers for this dish as they have tiny little seeds and are less watery. This cucumber side can be paired with anything, really. I like to keep a container of this in the fridge and have it throughout the week. It would be fine for 5 days in the fridge, but do note that the cucumber gets more spicy as time goes on!

  • This is the kind of cucumber to use.
  • Using a fruit peeler or mandolin, make long, thin slices.
  • Roll the slices up and put them in a fridge-friendly container.
  • Add the chilli (optional), garlic, and white vinegar.
  • Add the Sprite, just to cover the cucumber.
  • Rest in the fridge for at least an hour before serving.
  • Serve cold!
